Stuffed Peppers, Auntie Grace's Favorite.




Stuffed Peppers

6-8 Green Peppers, medium size
2 lbs ground beef
1 medium onion
1-2 cloves of garlic
Rice, any kind, whatever is left over.....OR cook 2 boxes of Rice-a-Roni....OR MAKE WHATEVER RICE YOU HAVE.  (about 4 cups total cooked) 
salt
pepper
cinnamon



Cut the tops off of the washed peppers. Pick out the insides of the peppers with your hands. Cut up the tops of the peppers into small pieces.
Saute ground beef (about 2 lbs) and  onion and the chopped up pieces of the green peppers. Salt, pepper and a little garlic if you have it.....and if not, don't worry.....garlic powder works too....I just happen to like the taste of the REAL STUFF.
Mix the rice into the ground beef mixture. Add sauce (recipe to follow)  a little at a time until it's the consistency you like. (probably about 1 cup??)  Add the DASH of cinnamon. 
Line the peppers up in a glass baking dish. Fill each pepper with the mixture. Top off with a little sauce (and the cheese, if you like it). Put about 1 cup of sauce and 1 cup of water in the bottom of the pan. Cover with foil and cook until peppers are tender (about 45 min) on 350.

**Add anything you'd like to this recipe....it's yours to "fix" the way you like it.  

Sauce

2 Large Cans of crushed tomatoes 
2 tsp Dry parsley
Salt
Pepper
Sugar (about 2 tbsp)
Grated onion (or chopped up small)
Garlic, at least 2 cloves
Olive oil, not much, just enough.  
White wine....or whatever you have on the counter....red.....pinot.....ANYTHING. 
Start by sauteing the onion and garlic in a little olive oil. Add the cans of sauce and about 3 tsps of dry parsley and the wine. Salt, pepper and sugar. Let cook on SIMMER ALL DAY....or at least an hour.
